Original recipe yields 1 - 9x13 inch dish

Directions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Cream together butter and sugar. Beat in eggs, one at a time, until fully incorporated. Fold in pineapple and bread. Pour into 9x13 inch baking dish.
  3. Bake in preheated oven 1 hour, until center springs back when touched lightly. Sprinkle cheese evenly over top and return to oven to melt cheese, 2 to 5 minutes.

My 15 year old son made this exactly as the recipe says. I was very skeptical because I'm not a fan of bread pudding - but it is delicious! Very tasty - 5 stars from the whole family.

My family serves this alongside pork chops or thick slices of ham. I substitute half the butter for 8oz of cream cheese!

instead of using shredded cheddar cheese a good substitute would be stewed fruits whether stewed pineapple, apple, plum, mangoes. more than nine slices of bread can be used as this makes the casserole more enjoyable.
