  1. In a medium bowl, mix boiling water, strawberry gelatin, sugar and lemon juice. Stir until dissolved.
  2. In a large bowl, whip evaporated milk with electric mixer until it achieves the consistency of whipped cream. Fold in the strawberry gelatin mixture. Pour into pie shell and refrigerate for 2 to 4 hours before serving.

My evaporated milk never whipped up, so my filling didn't set in the refrigerator. I put it in the freezer instead, and the filling reminds me of sherbet. Would be good with a citrus jello too...
