Original recipe yields 4 servings



  1. Preheat the oven to 400 degrees F. In a small bowl, mash and mix the cheese, 2 tablespoons of breadcrumbs, and the pepper with a fork. Lay the thighs, smooth side down, on a work surface. Crumble on the cheese mixture, then press to flatten. Roll up the chicken thighs and secure with a sturdy, pointed toothpick.
  2. Spray all sides of the chicken bundles with olive oil from a mister, or coat with a pastry brush dipped in olive oil. Spread 2 tablespoons of breadcrumbs and the salt on a sheet of waxed paper. Dip the thighs into the crumbs to lightly coat all sides. Shake off excess. Set on a large baking sheet. Mist all sides with olive oil.
  3. Bake for 18 to 20 minutes, or until golden.

Great with some minor changes: After applying the cheese to the chicken as directed, cover the cheese with a slice of prociutto. Thighs don't roll easily so just cover the chicken/cheese/prociutto with another boneless skinless thigh. Spray with olive oil and dust top with breadcrumbs. Cook as directed.



This is so easy and is so delicious. We use spicy bread crumbs and it comes out great. We make this all the time when we don't feel like spending too much time in the kitchen. Great recipe.



We love chicken thighs & gorgonzola, so this was a natural. I rolled in panko w/ granulated garlic added to panko.
