Directions

  1. Microwave 1 cup chocolate chips in a microwave-safe bowl on low in 30-second intervals, stirring after each melting, until chocolate is smooth and warm, 1 to 3 minutes. Do not overheat or chocolate will scorch.
  2. Beat cream cheese into melted chocolate until smooth; stir in wafer crumbs and raspberry jam. Cover and refrigerate until mixture is semi-firm, about 4 hours.
  3. Roll chocolate-cream cheese mixture into 1-inch balls and place on a baking sheet or platter. Freeze until firm, about 1 hour.
  4. Melt remaining 1 cup chocolate chips in the microwave, 1 to 3 minutes, stirring every 30 seconds. Dip frozen chocolate balls into melted chocolate; allow chocolate to set before serving.

Delicious. Made a couple quick changes. Added a bit more crushed vanilla wafers (1/4 cup at a time) as i found the truffle mixture a bit too soft. And although i used semisweet choc chips in the interior of the truffles I did dip them in milk chocolate!!

This was a similar recipe to Maria Jalosznski (Raspberry Fudge Balls) on this site--the only difference is that this one increased the jam by 1/4 cup and there were no nuts (her recipe was rolled in nuts). I didn't care for hers or this one despite the rave reviews. I won't make it again. It was too mushy for me.

These turned out great! My husband said they tasted as good if not better then expensive mall chocolates. Thank you for the recipe!
