Stewed tomatoes never tasted so gooood. Add to a salad or use as a relish. You can serve with mayonnaise.

Directions

  1. Pour tomatoes into a saucepan, saving the can to use as a mold. Bring to a boil over medium heat and stir lemon gelatin and salt into tomatoes until dissolved. Mix in vinegar. Pour the mixture into the empty tomato can and refrigerate until firmly set, at least 2 hours.
  2. To serve, puncture a hole in the bottom of the can and dip can in warm water until the gelatin releases. Place onto a serving plate and cut in slices.

I am the submitter of this recipe. When making this the instructions should have added that you have to decrease the liquid from the can by at least 1/8 cup. I cover with cling wrap and refrigerate for at least 12 hours, run a warmed knife around inside edge to remove. This is a good alternative to the cranberry mold for Thanksgiving. Try it for a different taste alternative. I have served it in small portions on a cracker that has mayo to help hold it in place and placed chives or diced onion on top. Use your imagination.

this is great. Made it for a ladies luncheon and everyone was asking for the recipe. It is also good spread on a bagel with cream cheese.
