Original recipe yields 4 servings

Directions

  1. In a small sauce pan add in: marmalade, orange juice and water. Simmer until blended and reduced about 50%. It should be like syrup.
  2. Add chicken, orange slices and peas until all are hot.
  3. Serve over rice. If desired, sprinkle with slivered almonds.

I used big chunks of chicken & half the marmalade. It was a good meal & everyone liked the new twist on leftovers. In response to another review,er it takes a darn good cook to come us with new ideas for left overs. Come to think of it, this would probable be good using the left over pork roast.
