Original recipe yields 1 9x16-inch casserole

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish with 1 tablespoon butter.
  2. Beat sweet potato, sugar, half-and-half, eggs, and vanilla together in a bowl with an electric hand mixer; spread into prepared casserole dish. Top sweet potato mixture with marshmallows.
  3. Stir 1/3 cup melted butter, brown sugar, pecans, and flour together in a bowl; sprinkle over marshmallows.
  4. Bake in preheated oven until hot throughout, about 30 minutes.

This was good but waaaaaay too sweet. Next time I will definitely adjust the brown sugar/butter topping, maybe just do half. With the vanilla and marshmallows, it was overwhelming.

I also made this with no changes. So delicious! I did not bake any sweet potato pies this Thanksgiving and did not miss them. Do not leave off the pecans. They definitely add to the texture and flavor.
