Directions
- In large microwaveable bowl, mix cereal, banana chips and almonds.
- In 2-cup microwaveable measuring cup, microwave butter, brown sugar, honey and ginger uncovered on High about 2 minutes, stirring after 1 minute, until mixture is boiling; stir. Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on High 4 minutes, stirring and scraping bowl every minute. Stir in coconut and pineapple; microwave uncovered on High about 1 minute or until cereal just begins to brown.
- Spread on waxed paper or foil to cool. Store in airtight container.

I suggest to cut back on the ginger. I put in just as much ginger in as the recipe called for, and the ginger taste when you're done is overpowering. I even added a teaspoon of cinnamon halfway through microwaving the honey/brownsugar/butter/ginger mixture because I could tell how strong the ginger would be. Also, I agree with the previous reviewer that it's not necessary to microwave a full 4 minutes plus an additional minute. I microwaved it four 3 minutes and 30 seconds before adding the coconut and pineapple, then once I added that I microwaved it for an additional 45 seconds. In the end the Chex Mix had a nice satisfying crunch with a very ginger-y taste. If you're not a big fan of ginger, just use cinnamon or apple pie spice or nutmeg instead- since that's all you'll really taste."
