  1. Heat olive oil in a skillet over medium heat. Cook and stir onion and garlic in hot oil until onion is translucent, 3 to 5 minutes; season with salt and pepper.
  2. Stir zucchini and basil into the onion mixture; cook and stir until zucchini is soft, about 5 minutes. Add tomatoes and mozzarella cheese; cook and stir until the cheese melts, about 2 minutes.



Searched for a recipe to use up some zucchini and |I found this. Was going to use it as a side dish to some pork chops...when I went to the freezer I saw a package of tortellini and got inspired...

Good and easy to prepare. We had this as a side dish for Tilapia Scaloppine (recipe also from AR)for a wonderful meal that we'll enjoy often in our household. Thanks for sharing patrice.

Excellent and so easy! I used grated Romano cheese instead of the mozzarella (didn't have any) and added some red pepper flakes.

This is a great recipe. I added a dash of red pepper and some pasta like in the picture and added the mozzarella after everything was cooked instead of melting it into the ingredients. My husban...

I have not tried. This looks very tasty...but I'm confused about the contents. It shows it with pasta, but no mention is made about cooking pasta and adding to recipe, or serving it on pasta. ...
