Original recipe yields 6 servings

Directions

  1. In a 3-quart saucepan heat butter; Add flour and cook 2-3 minutes to create a roux. Slowly whisk in chicken broth and blend until smooth (mixture will be thick). Bring to a boil.
  2. Reduce heat to simmer, add spinach and heat through. Add yogurt, salt, pepper and nutmeg and heat through. Serve.

"Just made this recipe - my husband isn't a huge spinach person HOWEVER he LOVED this too!!! AND I have cholesterol issues so the greek yogurt was perfect :-) I've always thought of creamed spina..." See morech as a 'no no' since it usually has so much cheese in it - not so any longer, yeah!!! Easy to make and good for you too - would highly recommend, doesn't get much better than that! Thanks!"
