  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Beat butter, white sugar, and brown sugar in a large bowl until fluffy. Stir egg, vanilla extract, and mint into the mixture until thoroughly combined. I've found my alternative to Thin Mints when the Girl Scouts aren't selling them!

Pretty Good. Baked well in 10 min. Used Chocolate Mint Chips and omitted the peppermint extract.
