Directions

  1. Combine rice and garlic in a saucepan. Stir in water, salsa, and diced tomatoes. Bring to a boil.
  2. Stir rice mixture and reduce heat to low. Simmer, covered, for 50 minutes. Turn off heat and allow rice to sit, covered, for an additional 5 to 10 minutes. Stir rice before serving.

We missed the cilantro from our normal recipe, but didn't miss the sodium content! I used thick and chunky salsa and added some extra onions (what Spanish rice doesn't have onions?). Used a fresh Roma tomato instead of the cup of diced tomatoes. My rice was done right at the 45 minute mark. The family said they would enjoy it more if it was white rice, but personally, I liked the brown. Next time I'll add some cilantro for personal family preference.

I love this recipe. I use my rice cooker. Also anytime I have leftover broth from vegetables or chicken, I use that in place of the water. I also add chopped onions, and sometimes throw in some frozen peas and carrots.
