Original recipe yields 4 servings

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Melt butter in a cast-iron skillet in the preheating oven.
  3. Combine peach slices, brown sugar, and cinnamon in a bowl; gently toss to coat the peaches well.
  4. Beat eggs, milk, flour, vanilla extract, salt, and nutmeg together in a bowl until batter well-combined but a little lumpy; pour into skillet. Top batter with the peach mixture.
  5. Bake in preheated oven until set in the middle, about 20 minutes.

This is an easy and tasty breakfast, perfect for ripe peaches. I thought one tablespoon of butter was not enough so I used approximately two tablespoons and also put a little cinnamon instead of nutmeg (not a fan of nutmeg) in the batter. Drizzled with a little maple syrup, it's a nice breakfast to start the day.

Easy to make and even worked well in my stainless steel skillet instead of a cast iron one!! I was surprised at how well this came out, and my kiddos loved it!! A good way to sneak an extra serving of fruit into breakfast!!

This made the house smell wonderful while it was cooking. I didn't actually try this but my son liked it. He didn't use yogurt but just drizzled maple syrup over it.
