“A Mexican restaurant I used to go served this dish. I came up with what I think is their recipe or close to it. It's awesome and a different take on traditional chicken salad. Can be served with crackers, tortilla chips, or on bread as a sandwich.”

Directions

  1. Mix chicken, pineapple chunks, walnuts, cucumber, mayonnaise, salt, and black pepper in a bowl. Serve in taco bowls.

This is light and delicious, and quite a nice change of pace from the same old chicken salad! I used pecans instead of walnuts and I halved the mayonnaise because I wanted the flavors of the ingredients to really come through instead being overpowered by the dressing. This may become a staple of my summertime diet -- it is refreshing and tasty!
