“My family prefers oven-fried chicken to the deep-fried variety. Creamy ranch dressing makes this wonderfully crunchy chicken tender and juicy.” - by Bearandy

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  2. Combine bread crumbs, Parmesan cheese, yellow cornmeal, and Italian seasoning in a shallow dish. Pour ranch dressing in a separate shallow bowl.
  3. Dip chicken thighs and chicken breasts in ranch dressing to coat; press into the bread crumb mixture to coat both sides. Arrange chicken pieces in the prepared baking dish.
  4. Cook chicken until no longer pink in the center and the juices run clear, 45 to 50 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

"I marinated this all day in ranch dressing and think that made a big difference in the moistness and flavor of the chicken compared to other reviews. I didn't have cornmeal so after marinating, I scoo..." See moreped up the chicken with a lot of the sauce still on it and just rolled it in italian flavored breadcrumbs with parmesan per the recipe. I made this for my Dad (I don't eat meat) and he loved it. The baking time was great too. Crunchy on the outside, fairly juicy on the inside (might check it a few minutes earlier next time though) and he said it had a wonderful flavor. Plus how easy can you get! Pour on dressing, let sit, roll in bread crumbs, bake. No brainer. My photo doesn't do it justice. This was a good one, and definitely a keeper. Thanks very much Bearandy!!"
