Holiday Rosemary and Ham Casserole

This brunch casserole is great to either mix together and bake immediately or may be refrigerated and baked the next morning. It is perfect to bring bring for a holiday brunch or to a morning family gathering. The rosemary complements a Southern tradition. Can be refrigerated overnight and baked for 1 hour in the morning if desired.

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Layer ham into a 2-quart casserole dish.
  3. Bring water to a boil in a saucepan. Slowly pour grits into the water while stirring constantly. Reduce heat to medium-low, and simmer until the grits are tender and thick, 3 to 4 minutes. Mix Cheddar cheese and butter into grits.
  4. Whisk milk, eggs, salt, and cayenne pepper together in a bowl; stir in rosemary and garlic. Pour grit mixture over ham. Cover casserole dish with aluminum foil.
  5. Bake in the preheated oven until casserole is bubbling, about 45 minutes.

I made this for Easter breakfast and it was absolutely delicious!! However, it was a bit runny after 45 minutes and I ended up draining some liquid off the top and then baking it for well over an hour. Any ideas on what I did wrong? I will definitely use this recipe again for left over ham.....a real keeper that I will pass on to my sisters.

Wow, A must try for Cheese Grits lovers that like a little heat.. The ingredient flavors blend very well together. Don't wait for the holidays to try it!

If this review was solely my own, I would give this 4 stars. However, my husband raved about it. He told me how much he liked it when I debuted it at dinner, and then again the next day when he ate leftovers for lunch, and then the day after that he expressed disappointment when there were no more leftovers for breakfast. So, thanks to his rave reviews and the ease of preparation, this gets 5 stars. The rosemary flavor really makes the dish. It's amazing how a little of the herb goes such a long way.
