  1. Whisk mayonnaise, lime zest, lime juice, rice vinegar, garlic, sweet chili sauce, and sugar in a large bowl, stirring to dissolve sugar. Mix cilantro and red onion into dressing. Stir cabbage into dressing mixture, about 1 cup at a time, until all cabbage is coated.

  • Taste the dressing before adding the vegetables; tweak dressing ingredient amounts if desired, based on what you're serving with the slaw. For Asian wonton tacos, for instance, I add more sweet chili sauce and rice vinegar. For fish tacos, I usually add more lime rind and juice. Sometimes I supplement some of the mayo with sour cream. You can use chopped green chili in place of the sweet chili sauce. If you choose to do this, double the amount of sugar. The lime rind is not essential. You can omit it if you only have bottled lime juice on hand.

Made this and took half batches to 2 different get togethers. Everyone loved it! The cilantro and lime were a happy change to a normal mayo coleslaw.

This was so great! I didn't measure, I used yogurt instead of mayo, spicy chili garlic paste instead of sweet chili sauce and I used a few scallions instead of red onion...it was excellent!

We really enjoyed this different take on coleslaw! I thought it could use some salt, but that's my personal preference. This was nice, creamy and flavorful...I will be making this again! Thanks ...

so good. we use this on top of pulled chicken sandwiches. I use sriracha instead of the sweet chili sauce and white wine vinegar instead of rice. it's the bomb.

Awesome! I do not usually like coleslaw, but love cilantro and lime. Was trying to find a new way to use some cabbage and this is a perfect side to Mexican dishes or BBQ. I cut back the mayo ...
