Directions

  1. Mix carrots, raisins, lemon juice, lime juice, and sugar together using a fork in a microwave-safe bowl; cover bowl.
  2. Heat in the microwave on low for 30 seconds. Transfer salad to a glass bowl; sprinkle marshmallows over salad.

I love carrot salads that don't use mayonnaise. This salad is so fresh tasting. I thought the marshmallows would do nothing, but they were just enough to add a little sweetness to the salad, along with the little bit of sugar. Definitely a carrot salad I will make again.
