  1. Heat butter in a large pot over medium heat; cook and stir onion and garlic until onion has softened and turned translucent, about 5 minutes.
  2. Pour beef stock, soy sauce, and Worcestershire sauce into onion mixture; add bay leaves. Drop in Montreal smoked meat and Canadian bacon one slice at a time. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Use tongs to remove meat from the stock and distribute evenly inside sandwich baguettes. Remove bay leaves; ladle stock into individual bowls for dipping. Serve hot.

I'm not finished making this yet but YES it is good! Had some left over smoked brisket from a local source and had to try this! I don't have the bacon. The wonderful smells coming from my kit...

This au jus is the tastiest ever. Made with low sodium beef broth, the rest as written, maybe simmered a bit longer, but I couldn't 't get enough of the au jus.

I made this recipe exactly like the directions but I did not add bacon. It turned out really good and my husband ate seconds. My crock pot is broken and thus was a good stove top alternative.
