Directions

  1. Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 10 minutes or until browned. Add onion; cook and stir 5 minutes or until softened.
  2. Stir in tomatoes, water and seasonings. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 3 minutes or until heated through.
  3. Stir in spinach; cook 2 minutes or until spinach begins to wilt.

Very good for an easy healthy meal! I added half a can of tomato paste and served over quinoa!

Tasted amazing! I used a little less spinach, and it was a bit peppery. But I was still able to enjoy it very much.

I used fresh basil, oregano and a Roma tomato. I added some chili paste and used onions and minced garlic to sauté. I added dry white wine to deglaze the pan and added William Sonoma chicken stock at the end then wilted the spinach.
