Original recipe yields 6 servings

Directions

  1. Heat oil over medium heat in a large pot. Cook onion and garlic in hot oil for 4 minutes or until tender. Stir in squash, undrained canned diced tomatoes, broth, water, cumin, oregano and black pepper.
  2. Simmer, covered, for 30 minutes or until squash is tender. Stir in undrained canned seasoned green beans and black beans. Cook for 5 more minutes or until heated through. Serve over hot cooked couscous. If desired, sprinkle with cilantro.

I loved this recipe! I used my own beans instead of canned and doubled the spices. Otherwise, followed directions. Loved it over couscous!

A bit bland when you follow the recipe. But I added in some italian seasoning and it really made the flavors come out. It was very good after the addition. Would definatly make it again.

Fantastic and healthy! Adding more spice is a good suggestion. The best part is most of the ingredients are usually in my pantry. I buy the pre-cut butternut squash which makes this so simple to prepare.
