Directions

  1. Heat oven to 350 degrees F. Grease bottom and sides of rectangular pan, 13x9x2 inches.
  2. Stir together all ingredients. Spread in pan.
  3. Bake about 25 minutes or until golden brown. Cut into 2-inch squares; cut squares diagonally in half into triangles.

I had a surplus of zucchini and thought this might be a good way to use it. Overall I really liked it and will definitely make it again. A few tips though: 1. Add the zucchini last. I had a hard time mixing everything thoroughly enough when I added everything in the order that the recipe recommends. 2. I found that 25 minutes wasn't quite enough, 35 was just perfect. Overall I it a 4 as written, with my suggestions above it is a 5.

I have been looking for this recipe for some time. Reminds me of my childhood because my mother made this all the time and it was wonderful. Made it yesterday and it was even better than I remember. Thank you for the recipe.

After reading these reviews, I increased the bisquick, doubled the garlic, grated the zucchini, added cheddar cheese (per a similar recipe). I accidentally omitted the oil but didn't miss it (oops!) & baked in a mini-muffin tin about 17 minutes. Made an easy & decent appetizer :) that was more biscuit-like, less egg-y than others mention. I definitely liked it and would re-make, but I don't know that it would get raves, even if followed exactly??
