Based on a 2,000 calorie diet


  1. Preheat oven to 350 degrees F. Spray 9x9-inch baking dish with cooking spray.
  2. Prepare mashed potatoes following package directions. Set aside.
  3. Heat oil in large saute pan over medium high heat. Add onions and cook until translucent, about 10 minutes.
  4. Stir in garlic, chili powder, cumin, salt and pepper and cook until aromatic - about 1 minute.
  5. Add ground turkey and cook until browned.
  6. Stir in tomatoes with juice, green chiles, corn (drained if using canned), and olives. Heat through.
  7. Place meat mixture into the prepared baking dish. Top with a layer of mashed potatoes.
  8. Bake for 30 minutes. Let stand 10 minutes before serving.
  9. Great as it is, but also delicious served with a dollop of sour cream, salsa or hot sauce.

It was pretty good. I did make a few changes. I added a can of black beans and sharp cheddar to the mixture and when it finished cooking I added a little more cheese to the topping. I will make this again. The family loved it.


I give it 5 for flavor, but it sure didn't stand up like the photo...mine was VERY soft and smooshy. Maybe needs some cornstarch in the mix. Will play with it.


Easy and delicious. We used ground beef instead of turkey. Couldn't find the chipotle bacon and cheese potatoes, so I just added about a tsp of chipotle seasoning to the bacon flavored potatoes. Made a full dinner for both of us, as well as enough left overs for a full dinner the next night. I'll definitely make this again.
