This delicious macaroni salad is so refreshing. My husband and I came up with it using ingredients we prefer and we make this regularly during the summer to go with lunches or as a meal on a really hot day. Easy recipe to modify according to your own preferences. Get creative and enjoy!

Directions

  1. Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain. Transfer hot macaroni to a large bowl.
  2. Pour Italian-style salad dressing and crushed pineapple over the macaroni; stir. Add ham, celery, tomatoes, eggs, and onion; stir.
  3. Cover bowl with plastic wrap and refrigerate until chilled, at least 1 hour.
  4. All done! Now take a photo, rate it, and share your accomplishments!

I've made this a couple of times now. I had never heard of such a salad, and since I love the combination of ham and pineapple, I just had to try this. I did use half Italian dressing and half light mayo because that's how I like my pasta salads that have Italian dressing in them. I also used whole wheat shell pasta because that is what I had. I do love how the whole wheat pasta tastes in this salad and I suggest using the shell-shaped pasta because it grabs onto the ingredients. I really love this salad and have a hard time controlling myself around it!!!!
