Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  2. Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and transfer sausage to prepared muffin cups.
  3. Mix half-and-half, baking mix, eggs, salt, and black pepper together in a bowl; pour over sausage. Top each muffin with Cheddar cheese.
  4. Bake in the preheated oven until cooked through and cheese is melted, about 25 minutes.

These were very good but I did change the recipe a bit. My family has wheat allergies so we used a homemade GF "bisquick mix". I halved the recipe as I only has a few eggs and about 10oz of sausage. I used whole milk. My kids loved them. I will definetly make these again. I got 6 muffin cups and I stuffed them with sausage to make them filling. I will make them again. Mine didn't look like the picture they looked like a muffin; they puffed up more but very delicious.
