White Fiber Mini Penne with Creamy Tomato Sauce, Meatballs and Parmigiano Cheese

Based on a 2,000 calorie diet


  1. Preheat oven to 375 degrees F. Bring a large pot of water to a boil.
  2. In a medium bowl combine 1 clove garlic, beef, pork, bread, 1/2 cup cheese, parsley, season with salt and pepper. Combine the mixture, until everything is incorporated.
  3. Shape mixture into small, evenly sized balls; bake on rimmed sheet for 10-15 minutes or until slightly browned and cooked through.
  4. Meanwhile, in a large skillet cook the remaining garlic clove in olive oil for 1 to 2 minutes or until slightly yellow in color. Add tomatoes and bring to a simmer. Add cream, season with salt and pepper. Gently toss the meatballs in the sauce and heat through.
  5. Cook pasta according to package directions. Drain pasta and toss with the meatball sauce.
  6. Top with parsley and remaining cheese.

I could eat 5 bowls of this - the meatballs are so easy to make and are delicious, I used the white fiber penne but I think another kind of pasta would work here too (spaghetti, for example). My kid cousins loved it too and they are the pickiest eaters I know.

I absolutely love this dish. It is amazing. My son and me loved it!! I can't wait till my husband gets home from work, so that he could taste it. As for me, it tasted great! My favorite was the meatballs. I've never made them before and couldn't believe how easy it was to make. I loved it and am looking forward to preparing it again.
