Directions

  1. In bottom of large bowl, combine bottled dressing and basil. Add chicken, brown rice, mango, and tomatoes. Toss well to combine.
  2. To serve: Place 1 lettuce leaf onto each of 4 serving plates. Divide salad mixture evenly and place into center of lettuce leaves. Garnish top of each serving with an equal amount of crumbled goat cheese.

This recipe and pic is misleading. I actually bought all of the ingredients for this and can say it looks nothing like the pic when the ingredients are combined. The balsalmic dressing turned this an awful looking mucky brown color. I am not familiar with crumbled goat cheese. It is not like feta. It is so soft it literally melts when stirred. The acidic dressing, basil, and tart cheese was an unpalateable combination. I am so glad I hadnt added the chicken and mango yet.I hate wasting ingredients too.
