Directions

  1. In a mixing bowl, knead together potatoes, 2 teaspoons cornstarch, salt and water to form a stiff dough. In a separate bowl, combine coconut and brown sugar. Form potato dough into small balls; make a well in the center and fill with coconut mixture; close up hole and reshape balls. Roll in sesame seeds, then in remaining cornstarch.
  2. Heat oil in deep-fryer or deep, heavy-bottomed pan to 375 degrees F (190 degrees C).
  3. Fry balls in oil until golden. Drain on paper towels. Serve.

As stated by other reviewers - i have to mix a lot of flour in with these to form a dough and then i had a really hard time stuffing them. I ended up mixing the coconut and brown sugar with the dough and used a minimarshmallow to form the ball around. Turned out really good - I was also thinking pineapple or bananna pieces would make a good center.

I made these last Thanksgiving. They are very good. I did mix the brown sugar and coconut in with the sweet potatoes to save time and added pecans, didn't roll in cornstarch, also drizzled lightly with heated maple syrup. Thanks for submitting.

These were very good. But like another reviewer said, it was hopeless to get that goop to form into balls without adding flour & even then it was difficult. Next time we will put it in a deep dish & layer the potato mash & then some of the coconut & suger & then potato again. Top with a bit more of the sugar mix & bake a bit to melt it. The sesame seeds can be overpowering in flavour so will use only a little. They sure tasted good though.
