Ingredients

2/3 cup beer
3 cups shredded Monterey Jack cheese
2 tablespoons all-purpose flour
1/2 cup frozen chopped spinach, thawed and drained
1 tablespoon chopped fresh cilantro
salt and pepper to taste

Original recipe yields 4.5 cups

Directions

In a medium saucepan over medium heat, bring beer to a boil. Lower heat. Slowly stir in Monterey Jack cheese and flour. Cook and stir until cheese is melted but not bubbly.
Mix spinach, cilantro, salt and pepper into the beer mixture. Serve warm.

"This was a great tasting dip but came out a little thick. Of course that may be because I substituted Cheddar Jack and some Mozarella for the pure Monterey Jack. I also highly recommend having a war..." See moreming dish for this as it set up quickly making it difficult to dip. This dip tastes great and I am sure I will make it again!"
