  1. Preheat oven to 300 degrees F (150 degrees C).
  2. Drizzle olive oil on a rimmed baking sheet. Spread spinach leaves in a thick layer covering the baking sheet. Arrange onions and artichokes over the spinach, and drizzle the marinade from the jar over the entire salad. Sprinkle with the cheese (and sausage, if you wish).
  3. Bake for about 10 minutes, or until the spinach is wilted but NOT crispy.

to make a low fat version, use canned artichoke hearts. mix the juice from the can with a bit of olive oil and seasonings and pour over spinach

mmmmmmmmmmmmmm,mmmmmmmmmmmmmm good. I have made this recipe numerous times and really enjoy the salad. So easy to prepare. I never measure, just start with drizzling olive oil on cookie sheet, add as much fresh spinach as possible, marinated artichoke hearts, some garlic salt, sprinkle with bacon bits, drizzle artichoke marinade from the jar over salad (be generous) and add feta cheese over top of salad. If you have a red onion, slice it thin and add it. Makes a complete meal for two. Thanks so much for the recipe....

Very delicious! I added some extra feta cheese and used canned artichoke hearts, then made a balsamic vinaigrette to pour over entire thing. ONe problem i encountered, though: the leaves on the bottom of the pan got soaked and too mushy, since they were sitting in the dressing.
