  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Melt butter in a large saucepan over medium heat. Slowly cook and stir celery and onions until onions are translucent, about 10 minutes. Stir in oysters, poultry seasoning, bread and enough turkey drippings to keep the mixture moist but not soggy.
  3. When bread pieces are thoroughly coated, transfer the mixture to a 9x13 inch baking dish. Cover and bake in the preheated oven 30 to 45 minutes, until lightly browned.

I needed to look in a couple of cookbooks to find out what to do with the oysters, since I had never used them before. Their advice: simmer about 5 minutes in saucepan, drain and chop. Also, ...

Tastes even better the second day! This also freezes well, and we make a double batch the night before Thanksgiving so that we have some for Christmas Dinner. Wonderful recipe!
