  1. Spread coconut evenly over a buttered baking sheet.
  2. In a medium microwave-safe bowl, combine sugar and corn syrup. Microwave on high 3 minutes. Stir in nuts and microwave 4 minutes more. Stir in butter and vanilla and return to microwave for 1 minute. Stir in soda until light and slightly foamy. Pour over coconut in pan. Let cool until firm, 1 hour. Break into pieces.

It took me four attempts to make this recipe work without burning it black in my microwave. The reason is that the recipe fails to mention that you need to take it out and STIR IT THOROUGHLY hal...

Yummy.....I used extra butter in the pan.....I mean you only live once :) ...and instead of the macadamias, I used cashews...how yummy! I am going to try this recipe again but use almonds next ...
