Directions

  1. In a shallow baking pan, arrange chicken and pour mesquite-lime marinade over all. Cover and place in the refrigerator to marinate for 1/2 hour before grilling.
  2. Preheat a charcoal or gas grill to medium high heat.
  3. Grill chicken breasts for approximately 15 minutes on each side, or until meat is cooked through and is no longer pink inside. Remove from heat, cool and slice into strips.
  4. In a large bowl, toss together the lettuce, tomato, onion, pepper, cheese, croutons, dressing and chicken until evenly coated. Serve immediately.

This recipe was okay but certainly nothing to write home about. It seemed to be lacking in something. I found it quite bland and would spice up the chicken if I were to make it again.

We ended up marinating the chicken in italian dressing and serving with italian dressing. We liked this very much! Hubby added the tri blend of italian cheeses (asiago, romano and parmesan). We used lettuce from the bag, what an easy dinner! We served with garlic breadsticks. Thank you for the post.

Not bad but just a little bit better than average for me. A true Caesar salad does not add all the extras that this recipe called for so I couldn't see adding them. Probably won't be making again.
