Directions

  1. Saute onion and bell pepper in a medium skillet until soft.
  2. Place chicken breasts on top of saute mixture and spray with cooking spray.
  3. Fry chicken with saute mixture until browned and cooked through, cutting or shredding chicken while it cooks.

I give it one star because my family ate it, but otherwise it was a disaster! The poor little veggies had practically burned away to nothing while the chicken was still half raw in the middle. It took some quick thinking to even keep them at an edible level.

I think you have to cook the chicken first then shred it as the vegetables sauté. This needs seasonings such as cumin, garlic, chili powder, etc.

This recipe was very easy and fast. My kids loved it. We served it in flour tortillas with mushrooms, cheese, and tomatoes. I used some legs and thighs instead of breasts, it is much cheaper. I just boiled and shredded the chicken with a fork. It turned out great!
