  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, sift together the flour, sugar, baking soda and cocoa. Measure and combine water, oil, vinegar and vanilla. Pour liquid ingredients into flour mixture and beat until smooth. Pour into prepared pan.
  3. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Delicious and so easy! After reading some other reviews I took a chance and made some changes that I think improved the cake immensely. I added 2 teaspoons of vanilla, 1/2 teaspoon of salt, and a tablespoon of mayonnaise (I know, it sounds strange but it really is a great addition!) Takes away the nonfat aspect of the recipe but adds a richness for just a few extra calories.

This is an excellent cake...if you want to make it a no-fat cake you can substitute apple sauce straight across for the vegetable oil...great for those on Weight Watchers! And it still tastes fantastic.


Surprisingly excellent! For a slightly healthier version, I made the following subsitutions: for 2 c sugar, I used 1/2 c honey & 3/4 c sugar. For 3 c flour, I used a mixture of white & whole wheat flour (more wheat than white). For 2 c water, I used 1 c "Lite" coconut milk and 1/2 c water. I added 2 T cocoa. The texture was medium. The cake was moist and sweet. I used a made-up coconut frosting and sprinkled coconut flakes on the top and used a berry jelly/honey mixture in between the layers. I baked it at 160 C for 30 min on "pastry mode" and it rose nicely. I will definitely make this recipe again.
