Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch square pan. In the microwave or in a metal bowl over a pan of simmering water, melt chocolate chips, stirring frequently until smooth. Set aside.
  2. Cream together the shortening and sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Combine the flour, baking powder, salt and cinnamon; blend into the creamed mixture. Divide batter into separate bowls. Mix the melted chocolate into one half and the drained crushed pineapple to the other. Spread the chocolate batter evenly into the prepared pan, then spread the pineapple batter over the top of that.
  3. Bake for 30 to 35 minutes in the preheated oven. Cool in the pan on a wire rack.

The recipe came out but my family politely declined a second bite.

This is an unusual but very tasty cake. I recommend it.

I used fresh pineapple - maybe too much because the top layer came out too gooey even though the bottom was firm (or perhaps it needed an extra 5 minutes in the oven). My kids mostly played with it. I sprinkled mini chocolate chips on top about 15 minutes before it was done to garnish the top. Pretty but a bit bland - I think it needs more dense pineapple AND chocolate flavor to be a big hit. Maybe butter instead of shortening? Maybe a teaspoon of lemon juice or some zest in the pineapple 1/2?
