Original recipe yields 1 - 9x13 inch pan

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, cream together the shortening and sugar. Blend in the egg, molasses and hot coffee. Sift together the flour, baking powder, baking soda and cinnamon; stir into the molasses mixture until well blended. Mix in the raisins. Pat the mixture evenly into the prepared pan.
  3. Bake for about 25 minutes in the preheated oven, or until firm. To make icing, combine butter, confectioners' sugar and cold coffee in a medium bowl; beat until smooth. Frost bars while warm, but allow them to cool before cutting.

the batter was beautiful, so smooth, tasted great... but the bars were dry. still soft, just not moist like i thought they would be. i even took them out of the oven 5 minutes early. the frosting is great, could eat that by the spoonful. i may experiment a bit with ingredients to fix this recipe. it is worth saving.

These bars were very good. I was afraid the coffee would make them taste more like mocha than molasses but they didn't. They were nice and moist. However, I didn't care for the frosting. It had a coffee after taste and I don't care for coffee. I still rate this recipe a 5 because the bars were excellent
