“This is a recipe for shrimp with a seasoned bread stuffing. I love to serve this dish when I have guests for dinner because I can prepare the shrimp early in the day. Original recipe yields 4 servings

Directions

  1. In a medium bowl, mix crushed crackers, bread crumbs and garlic powder. In a small bowl, blend butter and Worcestershire sauce. Mix blended butter, pepper and Parmesan cheese into the cracker mixture. Stir in white wine, using only enough to hold together the mixture.
  2. Preheat oven to 400 degrees F (200 degrees C).
  3. Butterfly the shrimp using a sharp knife, and arrange back side up in a large baking dish. Stuff shrimp with heaping tablespoons of the cracker mixture.
  4. Bake 20 minutes in the preheated oven, until cracker mixture is lightly browned, shrimp are opaque, and the tails have curled.

"Adding more flavor to the stuffing would help. Crabmeat (usually in seafood stuffings), garlic, seasoned bread crumbs, etc, makes a big difference. When "stuffing" the shrimp curl the tail down into..." See more the stuffing so it holds it in place. Also...drizzle with butter and you will get a tastier and more attractive shrimp. We served ours with home-made hollandaise and everyone loved it. A very simple recipe!"

"I didn't use any crackers but processed fresh bread crumbs from an herb bread that I made several days ago. I also sauteed minced onion and red pepper in butter and then added the crumbs to toast them..." See more a bit. For some extra added goodness I added crab meat to the mixture and made a roasted garlic and butter sauce to spoon over the top. Yum!"
