Whenever I have left over ham, I'm sure to make this main dish salad. Once I start to eat it, it is so hard to stop!!!

Directions

  1. Combine water and rice in a medium saucepan. Bring to a boil. Cover, reduce heat, and simmer for 45 to 50 minutes. Cool.
  2. Heat butter in a skillet over medium heat. Cook onion and celery in butter until tender, stirring frequently. Season with curry powder, and continue cooking for one minute.
  3. In a large bowl, mix together yogurt, lime juice, lime zest, and sugar. Stir in rice, onion and celery mixture, chopped kiwi, ham, cheese, nuts, and mushrooms. Arrange sliced kiwi over salad.

I brought this to a social gathering and it wasn't a hit. I felt that it was to bitter and all I could taste was the lime zest. I substituted chicken for the ham, it needs salt.
