Directions

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Place the cubed pork and potatoes into a glass baking dish. In a small bowl, mix together the yogurt, curry powder, milk and paprika. Pour the yogurt mixture over the pork and potatoes, and stir to coat.
  3. Cover, and bake for about 1 hour in the preheated oven. Remove from oven, and stir in mango, then return to the oven for another 10 minutes, or until pork is tender.
  4. Remove from the oven, and stir in the green onion and fromage frais. Season with salt and pepper to taste. Serve over cooked white rice.

You could substitute low-fat cream cheese for the "fromage". Note: For more "heat" add cayenne pepper or a hot curry powder, like Madras, to taste. Also, chopped cilantro would be more authentic to recipe than green onions.

Immediate problem here. The recipe calls for tomato purée yet nowhere in the actual directions is it mentioned where or how to use it. Plainly it is to be mixed in with the curry mixture but it isn't mentioned. Please correct this so the anal-retentive or challenged readers won't get confused.

This was very good. I was concerned about a heavy taste of cumin so I used 2 tablespoons and it was perfect. I also used fresh potatoes. This is a keeper.
