Original recipe yields 1 - 10 inch bundt pan

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan. Sift together the flour, baking powder and salt; set aside.
  2. In a large bowl, combine sugar, eggs, oil, orange juice and vanilla. Beat on high speed of an electric mixer until blended. Beat in flour mixture. Fold in chopped walnuts. Pour 1/3 of batter into prepared pan. Mix together chopped apples and cinnamon chips, and sprinkle 1/2 of mixture over batter in pan. Repeat layers, ending with batter.
  3. Bake in the preheated oven for 55 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Sprinkle with confectioners' sugar before serving.

I loved this recipe. I made it after the 2 cups of sugar were added. I did find that the batter was very thick and hard to spread. I also had to let cook for about 10 additional minutes. From the moment I took my first bite, I couldn't get enough. I think this is the most delicious apple cake recipe I have ever made or tasted. I have made it for pot lucks, teacher luncheons, a home dessert, and it always gets rave reviews.

Michele With One L

I opted to make a few of my own modifications which really increased the appeal and flavor of this cake. I used 2 medium apples (Gala) but left the skins on and omitted the raisins. I also increased each of the spices, especially the cinnamon to give it more flavor.
