Original recipe yields 12 pints

Directions

  1. Bring a large pot of water to a boil. Add green beans, cauliflower, lima beans, and corn. Cook for 5 to 8 minutes or just until tender; drain. Return vegetables to pot, and mix in onions, bell peppers, and green tomatoes.
  2. Heat vinegar in a saucepan until boiling. Stir in sugar, salt, celery seed, mustard seed, ground mustard, and ground turmeric until the sugar has dissolved. Pour over vegetables in pot, and bring to a boil. Simmer 20 to 25 minutes, stirring occasionally.
  3. Pour into 12 sterilized pint jars, and seal.

Went to the farmers market grabbed all the ingredients..came home..and made this terrific chow chow..such a great companion to down home southern dishes..JUST TERRIFIC!!!!

Made just as written and this is excellent chow-chow! I followed the scale to make 4 pints for my own enjoyment. But, I am going to make the full amount to give for Christmas along with my jams and preserves. Thanks, Eloise Liberty, for posting a recipe I've been trying to hunt down for 30 years.
