Original recipe yields 4 servings



  1. Coat chicken with flour. Heat oil in large skillet; add chicken. Brown on all sides. Remove from skillet.
  2. Add onion and Greek seasoning; cook and stir 2-3 minutes or until lightly browned. Stir in tomatoes, zucchini and olives; bring to boil.
  3. Add chicken. Reduce heat; cover and simmer 10 minutes or until chicken is tender. Top with cheese during last 3 minutes of cooking. Serve with orzo or other pasta.

Very good! I didn't have Greek seasoning, so I made up my own from a combination of oregano, dill, garlic salt, rosemary and thyme... all to equal around 1 tbsp. I added some fresh lemon and didn't flour the chicken, but it still turned out great! My roommates loved it.



Have made this many times and will continue to. A great company dish! One change I have made (saves time and mess) is that I don't bother to coat the chicken with flour.



Got great compliments on this one! Tripled the seasoning, and marinated the chicken ahead of cooking for about an hour with fat-free greek dressing -- was great, and not a bit left in the dish when dinner was through! Served with orzo with some garlic, parsley and lemon juice - combination worked quite well.
