Original recipe yields 1 - 8x4 inch loaf

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8x4 inch loaf pan.
  2. In a small saucepan, combine the butter, sugar, golden syrup, and milk. Bring to a boil, then remove from heat, and set aside. Sift the flour, baking soda, ginger, and allspice into a large bowl. Stir in the boiled mixture until just blended. Pour the batter into the prepared pan.
  3. Turn down the oven to 325 degrees F (160 degrees C), and bake for 1 hour, or until the top of the loaf springs back when lightly touched.

It has the consistency of corn syrup, but a golden color and a taste different from either light or dark corn syrup, and also substantially different from its cousin, molasses. This recipe is unlikely to taste as good without the use of honest-to-goodness golden syrup, but if you must, you can try substituting it with 2 parts light corn syrup and 1 part molasses or equal parts of honey and light corn syrup. You can purchase Lyles Golden Syrup on Amazon.com if you can't find it in local stores. Hope this helps."
