Directions

  1. In a glass baking pan, stir together the Worcestershire sauce, garlic, 2 tablespoons red pepper flakes, vinegar, oregano, basil, black pepper and olive oil. Place the meat into the sauce; cover and marinate overnight in the refrigerator.
  2. Preheat an outdoor grill for medium-high heat. Remove meat from the marinade, and discard marinade. Thread the marinated beef, chili peppers, and red bell pepper onto skewers.
  3. Grill the skewers about 4 to 6 minutes on each side, or until the meat is of the desired doneness.
  4. Place a large saucepan or Dutch oven over medium heat. Remove meat and peppers from skewers, and place them in the pan. Season with chili powder, and stir in tomatoes and pinto beans. Sprinkle in the remaining red pepper flakes.

I loved the flavors that the marinade imparted along with the grilled flavor of the meat. Due to my family's tender tongues, however, I did make some changes. I reduced the red pepper flakes in the marinade to 1/2 teaspoon, omitted the fresh hot chilies altogether, and roasted the red pepper whole on the grill, then chopped it. Then I threw everything into my slow cooker using 2 (14oz) cans (undrained) of diced tomatoes with green chilies instead of fresh. It gave just enough of a bite to make my 9 year old wimper and saved us old folks some grief in the chest area! I can't imagine all that pepper, though...ouch! This is definitely a keeper!

What a wonderful idea, grilled chile. The grill flavor added something special. It was wonderful. Can't wait to try it at my next tailgating party....
