Directions

  1. Heat oil in a large stockpot over medium-high heat. Crumble ground beef into pot and cook, stirring frequently, until well browned. Remove meat, leaving excess oil in pot.
  2. Cook onion and garlic in oil over medium-high heat until translucent. Stir in tomatoes, kidney beans, vegetable soup mix, and water. Reduce heat, and simmer 40 minutes.
  3. Add pasta stars, cover, and simmer 20 minutes more, or until pasta is tender. You may add more water at any time to adjust consistency.

I love this recipe. GREAT "car camping" food. I make the whole dish in the evening, eat about half of it, and then put the rest in my thermos for lunch the next day. I used mac-noodles instead of stars, as I couldn't find any--still great. And it's all small enough to get into--and back out of your thermos bottle.

This was delicious!! It was very easy and had tons of flavor. You could easily leave out the hamburger and it would be just as delicious and filling. Also, you could add more veggies if you like.

Very good soup. My parents and my husband all liked it, and it's not hard. I used ditalini pasta because I couldn't find the stars. I ended up adding two cans of tomato soup and water to give it more liquid.
