Original recipe yields 4 servings

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a small bowl, combine tuna, minced onion, and black pepper. Divide mixture onto 4 halves of English Muffins. Arrange 3 slices jalapenos on each muffin half. Top each with a slice of Cheddar cheese. Place on baking sheet.
  3. Bake in oven for 10 minutes, or until cheese begins to bubble.

I added a squirt of whole grain mustard and a squirt of mayo (to keep it together better). I also used whole wheat bread instead of the English muffins. This is a keeper!"

I ..." See moretoasted 1 slice of bread first, then added the tuna, jalapenos, and cheese on top and put it in a toaster oven while the other slice of bread was toasting. (if you use a toaster oven and don't toast the bread first, the bottom slice will be a little soggy). Soooo damn good!"
