Original recipe yields 4 servings

Directions

  1. Heat the olive oil in a skillet over medium heat. Add the ground beef, and cook, stirring to crumble, until evenly browned. Mix in the crushed tomatoes, chicken stock, and bay leaves. Simmer for 25 minutes over low heat.
  2. Meanwhile, place the rice into a saucepan with enough water to cover by one inch. Bring to a boil, and cook for about 10 minutes (halfway), then drain off water.
  3. Preheat the oven to 400 degrees F (200 degrees C).
  4. Remove the bay leaves from the sauce, and mix in the half-cooked rice. Stir in the basil, mint, eggs, and mozzarella cheese; season with salt and pepper. Transfer to a greased baking dish. Sprinkle Parmesan cheese over the top.
  5. Bake for 40 minutes in the preheated oven, or until the rice is tender, and the liquid has been absorbed.

Mine came out with a lovely cheesy crust on top and a beautiful crunchy bottom layer as well..." See more. My hub thought it was a bit bland (which is weird because usually I'm the one who finds things bland, but not this time) but my 2 toddlers gobbled it up. I didn't know exactly what to do with the eggs (I beat them before adding them) and the recipe didn't say what to do with the basil and mint (I added them with the cheese and eggs, etc) but it seemed to work out just fine. I made it with ground chicken and would probably double the meat next time. I also made it with a can of diced tomatoes and I might like even more tomatoes next time. I appreciated not having to chop anything and I will definitely make this again!"
