Original recipe yields 12 servings

Directions

  1. Gently stir together the Cheddar cheese, mayonnaise, butter, olives, seasoned salt, and curry powder in a bowl.
  2. Preheat oven broiler.
  3. Lightly toast the English muffins in a toaster. Spread each muffin with a portion of the cheese mixture. Arrange muffins on a large baking sheet.
  4. Broil topped muffins under the broiler until the cheese bubbles, 3 to 5 minutes. Cut into halves to serve.

These are tasty little treats and would be good to remember for a quick snack when people drop in. Warning though - I scaled this back to one serving an the topping was enough to cover 2 English muffins which when cut in half gave me 8 wedges. Garnished with tomatoes and parsley they are very pretty. Thank you!

These tasted pretty good. But seems like a lot of ingredients and fat for such a little appetizer. It's a LOT of butter - it tends to make it sloppy and greasy. It originally seemed as though continuing to cook them wasn't getting anywhere with that butter, but if you're patient and wait, and take them out just shy of being overcooked, the butter kind of "settles down." Maybe half would be enough... but that also might take something away from the flavor.
