“My boyfriend is from Mexico and he whipped this up one night and it turned out great. Beef, onions, garlic and peppers cooked in a delicious salsa verde sauce. Serve with rice, beans and tortillas. You may also add some sour cream to the sauce to make it creamier or add it after as a garnish.” - by Melissa

Directions

  1. Heat olive oil in a large skillet over medium-high heat. Add the onion, and cook for a few minutes, then stir in the beef, and garlic. Cook, stirring frequently until meat is evenly browned.
  2. While the meat is cooking, stir together the lime juice, jalapeno, cilantro and green onion. When the meat is browned, stir in the cilantro mixture and oregano. Pour in the salsa, cover and cook for about 10 minutes, stirring occasionally, until the meat is cooked through.

"We learned something about jalapenos when we shopped for this. The shelf guy at the grocery store assisted in choosing jalapenos, and he said his dad used to grow them. The more pointed the jalapeno, ..." See morethe spicier, he said. We hadn't known that, and since we're not big on really hot spice, we chose a very rounded jalapeno for this recipe. It was perfect! A pleasant heat after you eat, but not overwhelming. And oh, yes, we did like the recipe and will make it again. It's a keeper!"

Don't be afraid to use a lot more green salsa!! I used a lot more than 7 ounces. Use what's necessary to cover all the meat ...and then more as you see it soak up. You don't want your beef stew to turn out dry! Lastly, to make this 5-stars, simmer it for an hour. This is very quick. I never saw my husband and kids eat so much. They usually only eat chicken."
